Twelve teams of Caribbean chefs, pastry chefs and bartenders will put the spotlight on Caribbean cuisine and tourism at the regional competition at CHIC 2004, a Caribbean Hotel Association annual event.
The Bahamas team has been organized by the Bahamas Culinary Association, the Bahamas Hotel Association, and the College of The Bahamas School of Hospitality & Tourism Studies. Members include: team leader Dwayne Claire, Executive Chef at Our Lucaya; Simeon Hall, Executive Chef, Taino Beach Resort and Yacht Club; George Williams, Sous Chef, Our Lucaya; Neil Rolle, Chef, Our Lucaya, Sally Gaskias, Executive Pastry Chef, Our Lucaya; and Carseaon Clarke, Bartender, Atlantis.
The Bahamas returns to the regional competition, which the country helped to spawn a number of years ago, following a noted absence in recent years. The team’s participation is made possible thanks to the financial support of: the Ministry of Tourism, BHA, Prime Foods Bahamas, Atlantis Paradise Island Resort, Sheraton @ Our Lucaya and Westin @ Our Lucaya, Bacardi, Nassau Royale, Bristol Wines & Spirits, and Nassau Hotel & Restaurant Supply.
The competition will include national culinary teams from Anguilla, Aruba, Bahamas, Barbados, Belize, Cayman Islands, Cura�ao, British Virgin Islands, Puerto Rico, St. Lucia, Trinidad & Tobago, and United States Virgin Islands.
Each national team will compete in a ‘live kitchen’ environment, preparing and serving a 3-course meal for 25 persons in four hours. The teams will be required to design a menu on-site, using only the ingredients in their respective ‘mystery baskets,’ whose contents will not be revealed until the start of the competition.
Taste of the Caribbean 2004 features a seminar designed for operations of all sizes and in any segment of food services. The seminar will use a “hands-on” approach that offers the attendee some immediate applications for their food and beverage operation. In addition, the seminar will demonstrate basic computerized spreadsheets that can be used in everyday operations as part of the control process.
